An ancient Persian fable tells the story of a princess who drank spoiled grape juice to end her life, but instead found herself in a happier mood. Winemaking has inspired passion and ingenuity throughout the centuries and it has played a role in many cultures. At Balvonie, we believe that wine contributes to occasion, often enhancing everyday moments with friends and family. 

 

There is a lot of science and diligence that surrounds the production of good wine. Nowhere, however, is there the requirement of taking it too seriously! Wine is pleasure and the Prosecco sparkling style has always embodied a spirit of playfulness – lending itself perfectly to its inclusion in cocktails.

 

Here are a few of our favourites!

Classic Cocktails

Kir Royal
15ml Crème de Cassis
90ml Balvonie Prosecco

Serve neat in a flute.

French 75
10ml Lemon juice
5ml Simple syrup
30ml Roots Gin
50ml Balvonie Prosecco

Shake first three ingredients with ice. Strain to flute. Top with Balvonie. Lemon twist garnish.

Bellini
30ml Peach Puree
90ml Balvonie Prosecco

Serve neat in a flute. Stir gently before service.

Venetian Spritz
45ml Aperol
90ml Balvonie Prosecco
A splash of soda

Serve neat in a flute. Garnish with an olive.

Sbagliato
30ml Campari
30ml Sweet Vermouth
60ml Balvonie Prosecco

Build over ice in a rocks glass. Garnish with an orange peel.

Hugo Spritz
8 Fresh mint leaves
40ml Elderflower liqueur
60ml Balvonie Prosecco
20ml Soda water

Fill wine glass with ice and add mint leaves. Add remaining three ingredients (soda water to tast), stir gently to combine. Garnish with a lime wedge.

Not So Classic Cocktails

Sicilian Spritz
1 sugar cube
4 dashes of orange bitter
22ml Amaro
90ml Balvonie Prosecco
A splash of soda

Muddle sugar with bitters in a rocks glass. Add Amaro. Fill glass with ice, top with Balvonie and a splash of soda water. Garnish with an orange peel.

Marlborough Cherry-Oh
60ml Roots Gin
60ml Unsweetened Cherryland Cherry Juice
15ml Kirsch
15 ml Simple Syrup
1 dash of Aromatic Bitters
30ml Balvonie Prosecco
Garnished with a fresh cherry

Shake first five ingredients with ice. Strain to coupe. Top with Balvonie.

Border Pass
30ml grapefruit juice
8ml lime juice
45ml Reposado Tequila
15ml Simple Syrup
90ml Balvonie Prosecco

Shake first four ingredients with ice. Strain to ice filled Collins glass. Finish with Balvonie.

How Blue Am I
60g fresh blueberries
15ml Basil Simple Syrup
45ml Vodka
22ml Lemon juice
90ml Balvonie Prosecco
3 Blueberries

Muddle blueberries and simple syrup in a shaker. Add ice, vodka and lemon juice and shake well. Strain to ice filled rocks glass. Finish with Balvonie.

Diamond Fizz
60ml Roots Gin
20ml lemon juice
30ml simple syrup
Topped with Balvonie Prosecco

Shake first three ingredients with ice. Strain to flute. Top with Balvonie. Lemon twist garnish.

Meet me at the Ritz
30ml Brandy
15ml Triple Sec
7.5ml Maraschino Liqueur
7.5ml Lemon juice
60ml Balvonie Prosecco

Shake first four ingredients with ice. Strain to ice filled coupe glass. Finish with Balvonie. Garnish with an orange twist (natural OR flamed for a smokey flourish)

You had me at Marmalade
1 bar spoon Orange Marmalade
30ml Roots Dry Gin
5ml Campari or Red Bitter liqueur
15ml Lemon juice
45ml Balvonie Prosecco

Stir marmalade with gin, bitter and lemon juice until dissolved. Shake with ice and fine strain to chilled glass (we love the coupetini). Top with Balvonie.

Prosecco Colada
30ml White (or light) Rum
15ml Cream of Coconut (we use Real brand)
60ml Pineapple juice
90ml Balvonie Prosecco

Shake first three ingredients with ice until well combined. Strain to ice filled Collins glass. Top with Balvonie. Garnish with some Nibblish chocolate dipped coconut.
